Private property and old saurisserie (smoked herrings), the boucane opens its doors from Tuesday 16/09 to Sunday 21/09 from 10am to 12pm and from 3pm to 6pm. Tuesday 16/09 from 10am to 12pm: preparation of the equipment, from 3pm to 5pm: salting and stitching of fish fillets for putting in a chimney; Wednesday 17/09 from 10am to 6pm: traditional drying of fish with beech wood and cherry tree; Thursday 18/09 from 10am to 12pm: smoking and from 3pm to 5pm: descent of the fish from the chimney; Friday 19/09 from 11am to 12pm: tasting and glass of friendship. Presentation of the buggy and our project all week and weekend. Presentation of the project of the independent Dundee association and its products on its stand at the weekend at the maritime heritage village, quai Bérigny.
