Montbrun-Lauragais has one of the most beautiful restored and working windmills of all Lauragais. It was built in 1680, purchased by the municipality in 1991, then restored for ten years from 1992 to 2002 thanks to the involvement of many people and institutions. Given into service, inaugurated and opened to the public in 2002, it obtained the first departmental prize "The ribbons of the heritage" in 2003\\. Typical of the windmills of the past in Lauragais, included in the additional inventory of Historical Monuments, it produces today flour from organic farming. This flour is partly used for the manufacture of bread every Thursday (weekly market) and baked in our communal oven built in 2012 by the association "Au four et au moulin".

Le moulin à vent est situé à 20km au sud est de Toulouse et à 20km au nord ouest de Villefranche-Lauragais, au point le plus haut du coteau (290m) et aux portes d'entrées, comme l'indique le nom du village, du territoire du Lauragais et situé au cœur du village, à proximité de l'église, de la mairie et de l'école. Point de passage du GR 653 (voie d'Arles à Saint-Jacques de Compostelle), plan du réseau des chemins de randonnées affiché sur la place du village.
